I was trying to think of a spin on the classic Christmas treat of peppermint bark. I absolutely love peppermint this time of year and try to add to just about any dessert. My husband disagrees with me and thinks peppermint belongs in gum and toothpaste…I DID NOT know this before we were married…I promise.
Regardless he actually LOVED these. So if you have someone in your life who is totally wrong about peppermint try these out!
1. 2 tbsp coconut oil
2. 2 crushed candy canes
3. 1/4 crushed hazelnuts (or more if you would like)
4. 12 oz dark chocolate
5. 12 oz white chocolate
1. As you can see I set up a little station. I highly recommend this considering your dealing with melted chocolate. First I separately crushed the hazelnuts and candy canes in a food processor. Then I melted the dark chocolate in a glass measuring cup with 1 tbsp of coconut oil in 30 second intervals.
2. Pour 1-2 tbsp into cupcake liners. Then sprinkle in crushed hazelnuts into each one. Place into freezer for 10 minutes to set.
3. Then do the same melting process with the white chocolate. Pour 1-2 tbsp onto each set dark chocolate liner. Then sprinkle crushed candy canes on top. Place in freezer to set or keep in fridge for serving later!
The hazelnuts add a nice toasted and nutty flavor that complement both peppermint and chocolate! These are great for parties, gifts for friends, and perfect sitting in your pajamas watching Hallmark movies…I’m not saying that this is what I’m doing, but I’m not NOT saying it either.
